Ask Myles - Jake, London

Do you know any really good cocktails that use Champagne?

Jake - London

Hi Jake, the all time classic is the “Classis Champagne” cocktail! Half a measure of Brandy, 5 drops of Angostura Bitters onto 1 sugar cube, then carefully top up with Champagne. If this is too much try a couple of mint leaves, quarter to half a shot of good gin, half to one teaspoon of sugar and top up with the good stuff; it’s called a Cowgirl. For those trying to get in shape for the summer try a dash of elderflower cordial and top up with some bubbly.

Hi Myles,

I am a bit confused after seeing a lot of “bar syrups” for sale. Are they used for specific cocktails or can they be used instead of sugar in any cocktail? I have used sugar cane syrup for classic daiquiri and it was great, but I was wondering abot the use of curacao syrup, coconut syrup, mint syrup, etc.

My second question is about sugar syrup. How much do you have to use if you plan to use it instead of raw sugar?

My taste tells me that there are cocktails where using bar syrup instead of raw sugar is a mistake(for instance a mojito or a caipirinha). The raw sugar feels just nice. Is it acceptable to serve it with syrup?

Thanks a lot,

Fane
